  • Recipe: Baked Camembert with Rosemary, Thyme and Garlic

    There’s nothing quite like a luscious, gooey, baked camembert, especially if it’s encased in rich, flaky puff pastry. This recipe from Ginger Pig, is a crowd-pleaser too, as seconded by their Seasonal Recipe Developer, Ellie Morris, "It’s not easy to serve this dish elegantly, but it’s so delicious that your guests really won’t mind. To use up the scraps of remaining pastry, cut it into small star shapes, brush with beaten egg and dust with freshly grated Parmesan.” Takes 50 minutes Serves 4–6 as a starter or 2 as a main Ingredients: 1 sheet of ready-rolled all-butter puff pastry 1 whole Camembert Leaves from 1 sprig of rosemary 2 cloves of garlic, thinly sliced 2 teaspoons thyme leaves 1 egg, beaten Pinch of flaky sea salt Fortnum & Mason cranberry sauce, or redcurrant jelly to serve Method: Line a baking sheet with baking paper. Preheat the oven to 200°C (400°F), gas mark 6. Unwrap the sheet of pastry and lay it out on a board. Place the Camembert on it and score 2 large discs into the pastry, one about 3cm (1¼ inches) larger than the cheese to form the base, and the other about 6cm (2½ inches) larger, to form the top – check that the second piece will be big enough to hang down over the cheese on all sides and meet the pastry base. Cut the 2 discs out, using a sharp knife. Use a sharp knife to cut small slits all over the top of the cheese. Poke the rosemary leaves and slices of garlic into the holes. Scatter the thyme leaves over the cheese. Place the cheese onto the smaller of the 2 pastry discs on the lined baking sheet and brush the edge of the pastry with beaten egg.  Place the larger disc on top of the cheese and press the pastry edge down to meet the base. Pleat the edges to make a neat join or press together with the tines of a fork. Cut two small slits in the centre of the pastry top, to allow steam to escape, then use the sharp knife again to score a pithivier-style pattern on top: gently cut a curved sunray pattern into the pastry, without cutting all the way through. Brush the whole thing with beaten egg and sprinkle over a pinch of sea salt. Place in the hot oven and bake for 25 minutes. When golden brown all over and nicely puffed up, remove it from the oven. Leave to stand for 5 minutes before serving, which – because the cheese will melt voluptuously – is best done at the table on a serving platter, and in front of your guests.   • Dior In Scotland: The making of the Cruise 2025 Collection

    Within the magical gardens of Drummond Castle, Dior unveiled its 2025 Cruise Collection. The show intertwined the history of Dior with Scotland's sartorial heritage, showcasing a collection that had a rich legacy woven throughout.  Several months after its debut in June, the Maison has released an exclusive documentary-film, offering a glimpse into the making of their Cruise 2025 collection. In the documentary, titled ‘Dior In Scotland’, the french fashion house reveals never-before-seen insights into designer Maria Grazia Chiuri’s creative process - one that takes her on a journey to follow in the footsteps of the brands namesake founder, Christian Dior. An Ode to Scotland Chiuri found inspiration in Dior’s enduring connection to Scotland, with the film’s opening scene immersing viewers into the brand's visual archives. The documentary traces Scotland's influence on the brand, with images of Christian Dior’s first fashion show held in Scotland in 1955, serving as Maria Grazia’s initial inspiration for the collection. Paying tribute to the breathtaking landscapes and natural wonders that are central to Scottish culture, the film follows Chirui to Drummond castle. An ode to the Franc-Scot connection held in esteem by Dior, the french-inspired gardens of Drummond provided the perfect runway setting for the designer, “Scotland is a very special place for the brand’s heritage” she remarks in the film.  A Celebration of Storytelling & Collaboration Dior’s 2025 cruise collection is rooted in tradition. The documentary takes us alongside Maria Grazia on her visit to the Scottish countryside, to seek out tartan, tweed and cashmere artisans.  Much like the collection, the film captures Scotland's long standing-legacy in these inherited sartorial crafts, sharing stories of how collaborators created their intricately designed garments for Dior’s 2025 collection, using long-established Scottish methods. The documentary offers a glimpse into Maria Grazia’s meetings with renowned Scottish brand Harris Tweed, whom she worked alongside to create an exclusive tartan colourway for Dior. Justine Picardie, an author featured in the film, remarks “Harris Tweed are making perhaps the most ancient and therefore meaningful form of tweed. The colours of water, the colours of land - all of those colours are woven into the tweed”, highlighting the importance of this one of a kind collaboration. The unique Dior ‘Clan’ tartan sits alongside custom pieces by Le Kilt, Johnstones of Elgin and Pollyanna Johnson within the maison’s 2025 collection. Dior’s Punk Attitude Culturally symbolic elements are striking throughout the collection, with rich tartans, models adorned with chainmail, studded biker boots and exquisite embroidery - a nod to Mary Queen of Scots' politically defiant needle work.   • Louis Vuitton Revives the Iconic Takashi Murakami Collaboration for January 2025

    Louis Vuitton has unveiled its second collaboration with Japanese artist Takashi Murakami, featuring remastered designs celebrating the designer duo’s original noughties collaboration. This highly awaited release, set to launch on January 1st 2025, comes two decades after their first partnership in 2003. The original collection made its debut on Louis Vuitton’s Spring/Summer 2003 ready-to-wear runway, under the creative direction of designer Marc Jacobs. The bags were the work of guest artist Takashi Murakami, whom Jacob’s sought out to create a line of accessories which would appeal to a changing fashion audience - and this collection of playfully patterned handbags quickly became the  defining collaboration of the decade. In 2025 the collection's legacy is set to continue, with Louis Vuitton and Takeshi Murakami confirming these iconic logoed bags will return. The French fashion house took to Instagram to tease the revival of this coveted collection, sharing several short clips honoring Murakami’s legendary designs.
