Singapore Airlines has enhanced its in-flight dining by introducing an exclusive menu created by acclaimed chef and television personality, Monica Galetti. Available to passengers flying from the UK in Suites, First Class, and Business Class, this new gourmet offering delivers a fine dining experience at 35,000 feet.
Chef Monica, known for her South Pacific heritage and classical French culinary training, has designed a series of menus that reflect her signature fusion of bold flavours and refined techniques. Each of the four seasonal menus showcases locally sourced produce and presents a journey of flavours inspired by her childhood in New Zealand and her extensive professional career.
Passengers in Suites and First Class can indulge in a sophisticated four-course menu, while Business Class travellers will enjoy an equally impressive three-course meal. Each dish is carefully crafted to highlight premium ingredients, including fresh lobster, fine caviar, and lamb sourced locally in the UK. One of the menu highlights is Chef Monica’s signature Hokey Pokey dessert—a nostalgic chocolate and honeycomb treat inspired by her New Zealand upbringing.

The seasonal menus will be available from October 2024 to November 2025 on flights departing from the UK, with a fresh menu for each season. The Spring menu will run from March to May, followed by the Summer menu from June to August. Each cabin class will experience tailored seasonal offerings, ensuring a bespoke and exquisite dining experience for every premium traveller.
