This beloved restaurant has recently welcomed its new Head Chef, Nathan Kessous, who brings a fresh, exciting perspective to the menu. At just 30 years old, Nathan is already making waves in the culinary world with his unique approach to Mediterranean cooking.



Born and raised in Israel, he grew up surrounded by the rich influences of French, Moroccan, and Algerian cultures, which shaped his deep love for food from an early age. Though he initially pursued a career in medicine, Nathan eventually returned to his true passion for cooking, honing his skills at prestigious institutions like the Ferrandi School and working at renowned establishments such as Sadelle’s, Le Colvert, and Le Réfectoire.


Nathan’s culinary philosophy revolves around using sustainable, locally sourced, and seasonal ingredients, creating dishes that are inspired by his heritage, travels, and deep connection to the Mediterranean. His cooking showcases the essence of flame-cooking and embers, drawing out the flavours of small fish, vegetables, and aromatic spices. With each dish, Nathan seeks to evoke warmth and hospitality, creating meals that are meant to be shared in a communal atmosphere.


The name "Boubalé" is a Yiddish term of endearment, meaning "my little doll," a nod to the love and comfort associated with family meals. This familial heritage is celebrated in every dish, from vibrant salads infused with cumin and mint to flame-kissed fish and rich stews, all designed for sharing around the table. Every bite is a mosaic of sun-drenched spices, offering a sensory journey that brings together the best of Mediterranean flavours.
